Balsamic Tomato Basil Pasta

Finally, a pasta dish that is both delicious AND kind to your waistline. Using ingredients from Walden Farms, this tomato basil pasta stays low on carbs and sugar without sacrificing great taste. ⠀

 

Ingredients: ⠀

453 g gluten free pasta ⠀

1 bunch fresh basil ⠀

4-6 garden fresh tomatoes, diced ⠀

1 tbsp extra virgin olive oil ⠀

3 cloves garlic, chopped ⠀

4 tbsp  Walden Farms Balsamic Vinaigrette

4 tbsp grated parmesan cheese ⠀

1 tsp sea salt ⠀

1/2 tsp fresh ground pepper ⠀

1 tsp oregano ⠀

 

Method:⠀

  1. Prep the tomatoes, garlic, etc-- before boiling the pasta. ⠀
  1. Boil pasta while making the rest of the dish. ⠀
  1. Saute garlic in olive oil. ⠀
  1. Add tomatoes and cover, simmering for 7-10 minutes with the balsamic vinegar and seasonings until tomatoes fall apart. ⠀
  1. Cut basil leaves and toss all ingredients together, including Parmesan cheese. ⠀
  1. Serve additional Parmesan on the side, if desired.
