Rise'N Shine Breakfast Wrap

You will need:

1 large flour tortilla
2 slices bacon
2 large eggs
1/3 tomato
1/3 spring/onion
1/2 cup shredded cheddar

1 frozen hash brown

1/3 cup milk

black pepper, season to taste

salt, season to taste

Walden Farms Blue Cheese Dip, for serving

DIRECTIONS

  1. Cook bacon, until crispy, put aside
  2. Cook hash browns in bacon fat until golden brown, remove from pot and create a mash, set aside
  3. Whisk eggs and milk and cook over low heat. Stir in the hashbrowns when almost cooked, add diced tomatoes and spring onions and season with salt and pepper.
  4. On one half of the tortilla place the egg-hash mixture and mix in bacon bits and cheese. Roll the tortilla closed and place it in a medium saucepan to melt the cheese. Slice and serve, and dip in Walden Farm's Blue Cheese Dip for an amazing flavour for your breakfast treat.
